My last visit to Hotel Rural los Caracoles del Sevillano had been a while ago. Joaquin had invited me back to this remarkable location a couple of weeks before. I wasn’t going to say no to that. The day had finally come. I was driving my rental car through the Andalusian landscape and couldn’t wait to enjoy their home-made paella and the gorgeous view of the mountains. I relished the unspoiled nature and green mountains around me as I was driving up the typically Andalusian meandering little roads.

As I arrived at Hotel Rural los Caracoles del Sevillano, Joaquin welcomed me. We walked onto the vast estate together. You can stay in one of the cottages scattered around the complex. I fell in love with the dome shapes and cheerful colours all over again. We stopped at the cottage that would be mine for the duration of my stay. White walls give the room a vibrant look and the bed is super soft and comfy.  Bright colours add a cheerful atmosphere to the room. We kept walking to relish the panoramic view of this Spanish region.

Our stroll ended at Hotel Rural los Caracoles del Sevillano’s restaurant. The aroma of authentic Spanish delicacies made my stomach rumble. ‘I've got a surprise for you, Eliza’, Joaquin said with a big pan of paella in his hands. I couldn’t wait to dig in. And as icing on the cake, he had reserved me a beautiful spot with a view of the mountains. Dinner with a view; this is the good life!
