"You really should visit Nicky!" One day, two good friends of mine were driving through the rolling countryside of Andalusia. And the higher they went, the more fantastic the view became. At the perfect height, where Lake Vinuela coloured turquoise in the sun and the sea at Torre del Mar was beautifully visible, they found a special place to stay. Cantueso: the paradise of owner Nicky.
And now I am standing on top of that same mountain with that wonderful view. The white houses, the beautiful lush gardens and the restaurant immediately catch my eye. A view to match food, is what Nicky gave the restaurant and that is exactly what I taste a little later from her delicious Spanish cuisine. Nicky is beaming. A few years ago, she bought Cantueso because "here you will find all the ingredients of perfection". And that is no lie, I discover when I walk with her through her "Andalusian village". Because you can also take those delicious dishes back to your own typical Spanish cottage and enjoy them on your terrace. The cottages are built in the style of the region and furnished with rustic wooden furniture and a wood-burning stove. You can taste the peace that prevails in the gardens, at the swimming pool and everywhere you see that beautiful lake and the wonderful landscape.
Further on, some children are playing on the swing, the sun is high in the sky, the flowers are blooming. I think of my friends: "You should really visit Nicky!" I have never had a better tip.
