I closed my eyes, felt the warm sand between my toes and the sun warming my face. I was on Es Pouet beach, enjoying the view of the sea. The sea was very calm that day and a couple of beautiful sail boats were anchored off the coast. My holiday on Ibiza was all about unwinding. After a little less than an hour, I decided to return to Las Mimosas, the charming boutique hotel where I was staying, and grab some lunch at the restaurant with my friend Elena.
Las Mimosas has a real Ibizan atmosphere: modern and luxurious with a bohemian touch. The clear blue swimming pool is surrounded by palm trees and stylish loungers. I had tried the hotel restaurant on my first day and kept coming back almost every night. The restaurant is called Mimos and serves Italian cuisine. Which is one of my favourites! Elena and I picked a table. The dishes being served around us all looked mouthwatering. We ordered home-made cocktails to go with lunch, which looked just as gorgeous as they were tasty. I couldn’t wait for dinner!
I returned to the hotel room to freshen up. The room is white and modern and was clearly decorated with attention to detail. That morning, I had discovered Las Mimosas’ small library. I had grabbed a new book about the beaches of Ibiza, which I decided to read on the private balcony with a view of the pool. I couldn’t wait to hop into the car the next day, which is when we were going to explore all these hidden gems.
