"This is pa amb oli, a typical Mallorcan speciality." Ines, who has just welcomed me to Son Pons, arrives with a tray full of pieces of bread in olive oil. "We make our own olive oil from our own olives. Together with a cortado, we serve pa amb oli for breakfast. Have you tasted the olives with garlic yet? They are delicious too, if I do say so myself. Here, take some." Ines hands me the olives, just as Antonio, the owner, comes running up to me.
"Ah, I see you have already tasted our speciality. I love them myself." As I put another olive in my mouth, Antonio proudly talked about his love of flora and fauna. "Hunting is not allowed on my territory, and all plants are also off-limits to others. And have you seen the sheep and geese that roam around here?"
He looks on smiling as I take a bite of the bread. I spontaneously get goose bumps. I have never tasted such pure olive oil.
